AGAVE AND HARVESTING
Authentic from the origin, in our own plantations in the Altos de Jalisco, we guarantee the highest quality. We have a multidisciplinary team dedicated to maintaining our plantations in optimal conditions, meeting the highest quality standards. We proudly use only organic compounds manufactured by ourselves, always considering the environment. Since 2018, our ARA-certified plantations guarantee the absence of deforestation and ensure a constant supply to meet the necessary production and demand.
COOKING, EXTRACTION, AND FERMENTATION
We use two methods for cooking: autoclave and masonry oven. These ensure the complete hydrolysis of the agaves, resulting in an exceptionally sweet flavor and a smooth, uniform texture throughout the process. For extraction, we use a Milling Train, which helps extract the juice from the agave fibers. Fermentation is a crucial phase, where the juice obtained from milling transforms into ethyl alcohol thanks to the natural action of yeast. This process consolidates the distinctive flavors and aromas of Tequila, enriching its complexity.
DISTILLATION
At Casa Esparza, the distillation process is crucial for creating our high-quality tequilas. After fermentation, the liquid undergoes two stages of distillation: crushing, where the alcohols from the fermented juice are concentrated, and rectification, which separates the distillate into heads, hearts, and tails. Only the heart becomes our prized tequila. We use stainless steel stills and a hybrid combination of stainless steel and copper, allowing us to offer unique and distinctive flavor profiles. Each step is executed with precision to ensure excellence in every bottle.
MATURATION
We focus on maintaining the highest standards of quality, ensuring that each stage of aging in our barrels contributes to creating an exceptional final product, rich in flavor and complexity, reflecting our commitment to excellence in every bottle of tequila. We offer a variety of high-quality barrels that allow us to create unique profiles, meeting the specific needs of our customers for resting and aging. Our carefully treated barrels preserve all the distinctive aromas and flavors they impart during the resting and aging process.
BOTTLING AND LABELING
Our team ensures that every bottle is perfectly sealed and labeled, ready to be shipped to our customers worldwide. Every detail, from the selection of the bottle to the design of the label, is done with the utmost care, ensuring that every customer experiences the quality and excellence of Casa Esparza. We offer a variety of sizes and styles, whether industrial, artisanal, or custom-made. Additionally, we design blueprints and molds to manufacture exclusive bottles.
